If you’re looking for authentic Baja-style mariscos, then the El Jefe Baja Style food truck should be one of your first stops. You’ll find a wide selection of seafood dishes, including aguachile and ceviche. The ingredients are completely fresh, and each order is made on the spot. The seafood ingredients are brought in from Baja and are as fresh as possible when they’re served.
This truck can get busy, so you might have to wait for your order to be assembled. However, the wait will be worth it, and you might even want to take photos of your food to show your friends. You can find El Jefe most frequently parked in front of Porta Rossa.
Location: 1221 Broadway, San Antonio
2. Theory Coffee
Theory Coffee Co. has been crafting specialty coffee drinks since 2015. The owner, Mark Vollmer Jr., has over 25 years of experience in the culinary world, and it shows in the high-quality drinks the trailer serves. The company crafts its coffees with care and uses coffee roasted by Wild Gift Coffee, a roaster located in Austin. You can find the Theory Coffee truck parked on Nacogdoches Road every day except Sunday.
On the menu, you’ll find some traditional coffee favorites, including espresso, cappuccino, and Americano drinks. You can also order a vanilla, caramel, or chocolate drink. Plus, the truck offers milk substitutes like oat milk. The trailer opens early, so you can get a fresh cup as soon as you start your day.
Location: 2347 Nacogdoches Road, San Antonio
Hours: 6 a.m. to 2 p.m. Monday through Friday and 7 a.m. to noon on Saturday.
3. The Pita Chick
The Pita Chick moved to San Antonio from California and brought its tasty Mediterranean food with it. If you stop off at this truck, you can get a tasty meal for less than $15, complete with protein and veggies. Each dish is made fresh to order, which means you get consistently great food every time you visit.
The truck offers you the choice of three proteins: chicken shawarma, steak shawarma, or falafel. You then need to decide if you want your protein served in a pita or as part of a combination plate with rice and sides. Don’t forget to try the loaded shawarma fries or hummus topped with the protein of your choice.
Location: 1009 Avenue B
4. Katii Thai Food
You’ll find Katii Thai Food parked outside El Buho, a sports bar in St. Mary’s. Whether you’re visiting the bar or just passing by, you’ll definitely want to check out this food truck. It’s open late, so it’s an ideal stop if you want to satisfy your midnight cravings. If you like your food hot, you can amp up the spice in your dish as much as you would at your favorite Thai restaurant. Spice levels include mild, medium, hot, Thai hot, and SOS hot.
Katii Thai offers a variety of classic Thai noodle dishes, including pad Thai, pad see yui, drunken noodles, and fried rice. If you’d prefer something sweeter, you should try the mango sticky rice. The appetizer menu includes coconut shrimp, veggie rolls, deep-fried avocado, and deep-fried bananas. The entrees can include chicken, beef, shrimp, or a combination of proteins.
Location: 2710 N. Saint Mary’s St., San Antonio

5. Masshole Food Truck
If you’re in the mood for a lobster roll, you’ll want to stop off at the Masshole Food Truck. Here you can get a lobster roll in the Maine style, which is heavy on the mayo, or you can get a hot and buttery roll in the Connecticut style. Either way, your taste buds will thank you the next time you pass the truck on the River Walk.
Since 2020, Masshole has been offering New England-style rolls on brioche bread. You’ll get plenty of lobster flavor, making the roll worth the price. The food truck recently moved its permanent location to the River Walk, so it’s now easier to find than ever.

6. Mai-o-Mai
Mai-o-Mai is another late-night spot you should check out during your next outing. Chef Ivan Torres fuses Mexican and Asian cuisine to create delicious dishes. Whether you’re in the mood for bulgogi fries or vermicelli noodles with shrimp, you won’t be disappointed.
The Mai wings are marinated in chili, garlic, and ginger before they’re served with a side of ranch. You can also try the Suadero tacos, which are topped with confit brisket, cilantro, onion, and kimchi salsa. Other favorites include the pork al pastor steamed buns and the pork carnitas sandwich served on a toasted bolillo roll with Vietnamese flair. You also don’t want to miss the lemongrass fried chicken wings, fried to perfection in a spicy sweet sauce.
